It seems like my love affair with unconventional stuffed Yorkshire Puddings returns whenever the exam period draws near… Remember HAPPY BENTO: CREATIVE & WEIRD STUFFED YORKSHIRE PUDDINGS last June? Somehow I’m always eating Yorkshire Puddings in a manner unknown to most people (I’d only eaten Yorkshire Puddings with Sunday Roast once). Not that I’m complaining but purists please don’t come hurling at me!
This time I’d chosen to stuff the Yorkshire Puddings with Onion & Chives Cottage Cheese, cubes of Mature Cheddar, and Broccoli florets, then baked in the oven for a short 10minutes. I just love the juxtaposition of the crispy pudding cups and the soft cottage cheese! It’s also a combination that works pretty well, and the cottage cheese and broccoli provide quite a bit of protein and fibre too – Nutritious enough for long studying hours!
