If I had to write a simple recipe for happiness, it would consist of two main ingredients: Nutella and peanut butter (heaped spoonfuls of it straight out of the jar). But I’m writing a recipe on a food blog so I probably have to make it a little less abstract – so here’s your shot at happiness: a recipe for nutella stuffed peanut butter cookies!
Ingredients for Nutella Stuffed Peanut Butter Cookies: makes 12 large cookies or 24 small ones
Nutella Stuffed Peanut Butter Cookies
1/2 cup butter, softened
1/2 cup brown sugar, packed
2/3 cup sugar
1 cup peanut butter
1 tbsp milk
1 tsp vanilla
1 1/4 cup flour
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
Nutella for stuffing
Step 1: Cream butter and brown sugar (Note: not the white sugar that the recipe also calls for).
The easiest way to cream butter and sugar is to use a hand mixer. If you do not have a hand mixer, a whisk will do the same job with a little more effort. It is important to have the butter softened, according to what the recipe calls for, because it is so much easier to cream it. To soften it, take it out from the fridge about 10-20 minutes before baking.
Cream butter till light and fluffy.
Step 2: In another bowl, mix the dry ingredients (Peanut butter, sugar, flour, baking powder, baking soda, salt)
This is the final step before you get the dough. Using your hands, mix all the ingredients until it the dough is soft and consistent. At this point, start to preheat the oven to 175C.
Step 5: Nutella, oh glorious nutella!
This is our favourite part – using a teaspoon, scoop some (or lots of) nutella and press it in between small balls of cookie dough. You can almost taste the cookie at this point…
Just because we were feeling festive! If you intend to shape your cookies, do refrigerate the dough for about 30 – 45 minutes before doing so, so that it is more easily shaped.
