Step-By-Step Recipe: Oven-Roasted Tomatoes with Soft Brie & Greek Honey

When it comes to cooking and food, I have my quirks. One major quirk is that I don’t like to cook the same thing twice (serious cooking that is, I am not that anal retentive). So when I cook something twice, that something must really be something I love to bits – And this is one of it. Indefinitely. Oven-Roasted Tomatoes with Soft Brie & Greek Honey!

I remember making these last year because I had too many tomatoes and a packet of about-to-expire soft Brie cheese in my fridge. Who knew that a simple combination of tomatoes and cheese could be this addictive? It’s really easy to prepare as well – Made this for a dinner party of 6 (more on this next time) and it seems to be a dish with mass appeal… You won’t regret making this for sure!

Ingredients for Oven-Roasted Tomatoes with Soft Brie & Greek Honey: Serves 4

Oven-Roasted Tomatoes with Soft Brie & Greek Honey
4 medium-size tomatoes, ripe and juicy
Soft Brie (goat’s cheese would also do)
Greek Honey
Basil (fresh or dry, optional)
Sea-salt, to taste

Step-By-Step: Oven-Roasted Tomatoes with Soft Brie & Greek Honey

Step 1: Making little Tomato Bowls

We bought these really fresh tomatoes with the vine on (no kidding). Slice the top 1/5 of the tomato.

Using a spoon, empty the runny insides making a little “bowl” of sorts. Don’t throw away the soft bits and insides yet – Look out for what we’ll be doing in an upcoming post!

Step 2: Bowls of cheese and honey

Somerset-made Brie! Hey that’s my county. County pride yo.

Cut into chunks and place into your little tomato bowls. Drizzle with Greek Honey and basil if you desire.

Wrap tomatoes entirely in foil and roast for 20minutes at Gas Mark 4, medium heat setting. In the last 5 minutes, remove the foil, exposing the tomatoes to the oven directly. This extra step gives the tomatoes that nice browned appearance.

A result? A soft juicy oven-roasted tomato with an even softer salty-sweet cheese and honey potion within. Season with sea salt if you like – But I think it’s perfect just like that.
